On Line Psi

The sisters of On Line Psi send best wishes to all our sisters in Beta Sigma Phi.

FOUNDERS DAY: Our celebration was special this year because two of our sisters, Vicki S and Kimberly W received their Exemplar Degrees.

President Cheryl K made the event extra special by presenting an Online Celebration for Founders Day. She began with the Opening Ritual, followed by Beta Sigma Phi Grace. Then Cheryl treated us to a delicious meal of chicken primavera, salad, pasta, spring vegetables and peach cobbler with ice cream.

After a time of fellowship with our sisters, Cheryl began the Founders Day Pledge by lighting three candles representing "Beta" (first candle), "Sigma" (second candle) and "Phi" (third candle). It was a lovely ceremony, and Cheryl thanked the Executive Board and acknowledged everyone's contributions for the past year. Then the incoming officers for 2011-2012 were announced:

Founders Day Celebration ended with the Closing Ritual and the Mizpah. The sisters of On Line Psi would like to thank Cheryl for the wonderful job she did with Founder's Day and hope that the online event will become a yearly tradition.

MORE HONORS: Jean T received the Golden Circle from her land chapter in recognition of her accomplishment of 50 years of service to Beta Sigma Phi. Laurie R was elected to the School Board in Cohoes, New York on May 17, 2011.

MEMBERSHIP: Dee L and Vikki N have returned from leave. We are happy to have them back.

PROGRAMS: Our May program was given by Laurie on the Duties and History of Boards of Education, and what makes an effective member. For our April program, Rose K posted the birthday calculator for fun statisitics and astrological dates.

BOOK CLUB: For the final book of the year Jean T recommended "The Story of Edgar Sawtelle" by David Wroblenwski. It was a 2008 selection of Oprah's Book Club. Born mute, speaking only in sign, Edgar Sawtelle leads an idylic life with his parents on their farm in remote northern, Wisconsin. The family has raised and trained a fictional breed of dog whose thoughtful companionship is epitomized by Almondine, Edgar's lifelong friend and ally. Everything changes in Edgar's life when his paternal uncle returns to live with them.

RECIPES: Beth posted some recipes for May thru the Summer. Here are 3 of them:

Tilapia with Green Beans

2 tablespoons all-purpose flour
2 teaspoons chopped fresh
2 tablespoons chopped fresh parsley
Kosher saltand freshly ground pepper
4 6-ounce tilapia fillets
4 tablespoons unsalted butter
1/2 pound thin green beans
1 clovegarlic, chopped
1 cup grapeor cherry tomatoes, halved
Juice of 1 lemon parsleyin a shallow dish. Season with salt and pepper.
Dredgethe fish in the flour mixture, shaking off the excess. Melt 3 tablespoons butter in the skillet, then add 2 fillets and cook until golden brown on the bottom, about 4 minutes. Flip and cook through, 1 to 2 more minutes. Transfer to a plate and keep warm. Repeat with the remaining 2 fillets. garlic to the skillet and cook about 2 minutes. Season with salt and pepper, then add the tomatoes and cook until just softened, about 1 more minute. Stir in the lemonjuice and 1/4 cup water, then cover and cook until the beans are tender, about 3 more minutes. Remove from the heat and stir in the remaining 1 tablespoon butter until just melted. fish and vegetables among plates. Garnish with oregano.

Roast Chicken With Spring Vegetables

Preheat the oven to 500 degrees F.
Rinse the chicken and pat dry. Season with salt and pepper, then place skin-side up on a rimmed baking sheet. Squeeze 1/2 lemon over the chicken and drizzle with 1 tablespoon olive oil. Roast 15 minutes. Meanwhile, cut the potatoes and radishes in half and cut the scallions into thirds. Toss the potatoes, radishes, carrots and the remaining 2 tablespoons olive oil in a bowl; season with salt and pepper.

Remove the chicken from the oven and scatter the vegetables around it. Continue to roast until the vegetables are tender and the chicken is golden and cooked through, about 20 more minutes. Squeeze the remaining 1/2 lemon over the chicken and vegetables. Top with the dill and season with salt.

Tuna Waldorf Salad

In a large bowl, toss together apples and lemon juice. Add celery, raisins, walnuts and tuna; toss gently. In a medium bowl, combine mayonnaise, milk and cinnamon; blend well. (For a sweeter dressing add sugar.) Pour dressing over apple-tuna mixture; toss gently to coat.

On Line Sigma


Greetings from OLS. It has been a crazy couple of months for us. We have all been very busy. Sadly, Sheila B’s Dad passed away. Even with all of the recent floods, fires, tornados and other disasters, we are happy to report that all OLS sisters are safe and sound. Sheila W, from AL, visited with us in May and Marvelous Marge received the Syracuse City Council Woman of the Year.

Our Tellers, Sheila and Amanda, did a great job on the elections and our new Executive Officers were installed on April 30th.

In April, our hostess, Eleanor, welcomed us to her place which all dressed up for Easter. She put on a yummy spread of appetizers and sandwiches with plenty of "Tim Horton's" coffee and “Red Rose” tea to wash it down then she had homemade chocolate fondue eggs for us to take home. For our social, Mollie took us on a tour of Texas vineyards and wineries. It was fun exploring them but we did get a little tipsy by the end of it. We joined in an online Founder’s Day celebration.

As our hostess for the very berry month of May, Linda had all sorts of berry foods and drinks set out on a vintage strawberry print tablecloth covered dining table. We all ate ‘very berry’ well thanks to our ‘very berry’ hostess. Our social for May was a Funny Hat Showing put on by Kathy. We all had to wear a hat, the funnier the better. We had old hats, handed down hats, craft hat, animal hats. We even chatted about the hats from the Royal wedding. Jan presented a program which launched the new theme perfectly. She taught us about genealogy. She told us about the things she had learned about her family and we could go about getting started. Luckily she warned us how addictive it could get but it was already too late for some of us.

Through-out the year, our Mail List/Website committee keeps fairly busy but this time of year, especially so. Sheila not only adds/removes members, monitors the sign in log, ensure our messages get through, posts our pictures and updates our info, she also creates web pages for rituals, memorials, voting pages and special events, like Founder’s Day. Kudos to Sheila and her tech savvy in keeping us happily connected and chatting on.

Finally, we are thrilled to announce our 2011 Woman of the Year. We all headed on down to Texas to visit someone who made the last two years so much fun. She has given us wonderful programs and kept us all straight on membership and rituals. This OLS Angel did not let her 'wounded wing' keep her far from the keyboard for long. Even when in pain, she fulfilled her responsibilities as an officer and participated fully in chapter life. This active sister deserves the title of Woman of the Year. We thank you sincerely, Tina, for all that you have contributed to our chapter and our sisterhood.

On Line Delta

On Line Delta has been quite busy in the last couple of months. We have completed our programs on National and State Parks and have had the first program for this year on Traditions. Our program this month was on the Yellow Rose, where it originated and what our favourite yellow rose memory was. We have also completed our socials on our favourite sporting results. We had an Easter Social which was an Easter Egg Hunt and lovely lunch. We also had a wonderful Founders Day put on by our president Evelyn who also was our deserving Lady of the Year.

Several of our sisters have traveled to various places around the world and have reported to us, some with pictures, about these travels. We have also had a couple of sisters have serious health issues but they are all strong women who are dealing with these things the best way they know how.

Our secretary has taught us a lot about different areas of Australia where she lives by using this info as part of polls for us to mark our attendance. It has been very interesting and we all now want to go there.

Greetings all Online Sisters, OLK
is proud to announce we have one new member and another will have her second meeting in July. Other good news is we will be New Aunties around the first of July. This new baby has two older brothers. All reports say that everything is going well. We're all excited as the new announcement is pending.

All of us in OLK have come together to support a sister in foot surgery and another in the death of a family member after a long illness. Our sisters in the Mississippi & Missouri River Delta areas remained dry from the threats of flooding and possibly evacuation from their homes. And for the Memorial Day, we remembered those who fight for our freedom and celebrate and salute two of our own who have served in the armed services.

Life surrounds us with surprises every day. All of us in OLK hope the surprises for all of you are blessings. Remembering each of you in peace and joy.

On Line Theta
As for all chapters this time of year, it has been a very busy time for OLT.

We enjoyed Founder's Day in Titusville, Florida and included several rituals along with the agenda sent from International. We did learn that the Order of the Rose should be presented as a separate happening separate from a meeting or other social. This beautiful social is simply too long to be part of other activities except maybe a tea. Our group server got overloaded which meant a lot of stress for the ritual presenter. We had several other awards and rituals to be done after the Order of the Rose. All though it was a late evening for those on the east coast, it was a lovely, meaningful evening.

The day following our Founder's Day celebration, our May meeting started.

As have the other on line chapters we have had the happiness of a new grandson and the sadness of illness amongst our members' families.

We celebrated our 12th birthday with ss exchanging dollar gifts for the occasion. It is amazing what we can find for a dollar!! Just wish that the postage was only a dollar! We were formed on May 13, 1999. Some of our original members are still with us.

In true BSP tradition. reading is a big part of our lives and we exchange critics of the books that we have read. Always interesting to see what others are reading. Also in our BSP tradition , we click on all of the sites at the Breast Cancer site

We were very happy when the Veteran and Autism buttons were added. Plus many of us do service in our community through our lcs, churches, and other organizations.

We began this year with all of the programs and socials planned for June 2011 - May 2012. Not an easy fete! But everybody was eager to help.

Our yearbook chairman mailed new yearbooks to each of us. Filled with chapter news, bios, pictures, etc. Truly a work of art. We very much appreciate them. Mine moved from the file drawer to the desk as I use it so much.

Our president Ann has been working really hard to help the victims of the Joplin, MO tornado disaster. Cyndi received high honors as Florida State woman of the year at the annual convention. Congratulations to Cyndi. Susan Vaughn enjoyed a Miata car rally in AR after a stop in Branson, MO. Stacy and family are already booked for the summer with camps, volleyball tourneys and travel. Margaret is enjoying walks on the beach and a relaxing summer. Because of travel plans, Margaret and her land chapter president are going to job share the position. Jan in Australia misses not being able to fully attend meetings. Karen's dog passed away, and she adopted a 2 year old mix chow. Karen is headed to Austin to tour colleges for her daughter. Betty is looking for suggestions for our traveling book. Karen is sending the current one onto Margaret.

Judy did a wonderful program on Customs and Traditions in May and reported on the Greater Good Networks and Freerice.com for our service projects.
